Recipe From Angela – Immune Booster Drink

Ingredients ( makes approx. 400ml to store in fridge or share)

  • 2 fresh Lemons (remove rind) – great for Vitamin C
  • 1 big thumb of ginger (keep peel on) – great for digestion and more

  • 2 tsp ground turmeric – our anti-inflammatory ingredient

  • 2 grinds of black pepper – helps the body absorb turmeric

  • 2 fresh oranges (remove rind) – more Vitamin C!

  • 120ml cold water

Directions

  1. Add all ingredients to a good juicer (if using blender you will need to strain after). Just leave out ingredients you don’t have to hand – it just what we need to do right now!
  2. If you need to add a natural  sweetener such as honey ( maple syrup if vegan)

  3. Store in the refrigerator and drink daily.

 

 

Recipe From Giselle – Spring Muffin Frittatas – healthier than cakes and great for protein brunch

Ingredients (makes about 12)

6 large eggs

150g hard cheese such as cheddar or Gouda

1 tsp dried Thyme or other dried herbs

Salt & pepper, garlic if you like

Olive Oil

2 medium leeks, or onions work just as well if you don’t have leeks

1 or 2 other vegetables you have such as: grated carrot, chopped red peppers or cooked sweet potatoes

Method

Heat oven to 180 C/gas 4

Grease 12 hole muffin tin, or use cupcake cases if prefer

Wash and finely cut leeks (or substitute)

Warm the olive oil in a pan and gently saute your leeks and other vegetables until cooked

Whisk together eggs and add grated cheese and season – all in a large bowl

Combine the eggs mixture and your pan vegetables well

Carefully spoon into the muffin tin – don’t fill too high as they rise

Put into the oven for about 20 minutes

They are ready when light golden colour and don’t wobble, cool slightly before removing

Lovely with salad or on their own
